Speaking of Apnea, in 2019, Norberto Mario and producer Luca Bellani decided to create a new product using Pinot Noir from Oltrepò Pavese and Lake Como.

They blended three vintages of Pinot Noir, selected together after various tastings and trials, and added must to begin the second fermentation, which will remain in the cellar for two years.

At this point, the bottles were immersed in Lake Como, at a depth of 14 meters in suspension. The temperature variation, between 8 and 12 degrees Celsius, and the constant movement of the currents literally “cradled” the wine, keeping the fermentation yeasts in suspension for a year.

This gave Apnea, the first classic method wine immersed in Lake Como, an incredible elegance and creaminess.

On June 4, 2022, we removed the first wine from the water. The clarification process took longer than expected due to the yeasts, which were much more dusty.

The result is truly fantastic: no added sugars and very little sulfites. It’s definitely a wine you can drink now but will express its best in 5 to 8 months.
